It preserves the flavor of the tomatoes and uses carrot for sweetness. SAUCE POMME D'AMOUR POMODORO (TOMATO SAUCE) 2 lb. plum tomatoes (canned - imported, Italian, and peeled, or fresh) 1 garlic clove, minced 1 onion, finely chopped 1 carrot, finely chopped handful fresh parsley, finely chopped 1 stalk celery, finely chopped a few leaves fresh basil (use fresh basil or don't use it at all) 1/4 C. olive oil (Bue is highly recommended) salt and freshly ground pepper Clean tomatoes and cut them into small pieces. Saute in olive oil the garlic, chopped onion, celery, carrot, and parsley. Cook for a few minutes and then add the chopped tomatoes and basil. Simmer uncovered for 30 minutes and then add some salt and pepper. Continue to cook uncovered in order for the water to evaporate. This can be put through a food mill for a smooth sauce or served as is, with pieces of vegetables. Correct seasoning at before serving. ---------------------------------- And here is a recipe that uses the tomato sauce. Baccala is dried cod. It is sold in all Italian grocery stores. It is preserved with salt that must be removed by soaking. Make sure that the fish is white, and it should still has the skin on it. BACCALA ALLA LIVORNESE 1 lb. dried cod fish vegetable oil for frying tomato sauce handful minced parsley 1 minced garlic clove Pre-soak the cod for 24 hours in a bowl of cold water, changing the water frequently to de-salt it. Make sure there are no bones in the fish. Cut the fish into small pieces. Pat each piece dry and flour lightly. In a pan, deep fry the fish in vegetable oil on both sides (do not overcook -- just barely brown it). Set aside on a warm plate. In another pan, have ready the heated homemade tomato sauce. Put each piece of fish in the sauce, cooking a bit and then turning over once. Garnish with parsley and minced garlic.
